Pancake Tuesday also known as Shrove Tuesday is a traditional Christian festival that marks the day before the beginning of Lent. Lent lasting 40 days and 40 nights is a period of fasting, reflection, and penance in the lead-up to Easter. The word ‘Shrove’ comes from the word ‘shrive,’ which means ‘absolve.’

The day before Lent began, all of the rich, indulgent foods in the house had to be used up. During Lent, Christians traditionally abstained from certain foods, including dairy and eggs. Shrove Tuesday provided an opportunity for people to use up these ingredients, which led to the custom of making pancakes.

Today, the holiday is still widely celebrated. It is a time for family and friends to come together, and try out different recipes and toppings. Enjoying the community aspect behind the festival.

To celebrate we have shared some of our favourite pancake recipes, of course, using ingredients from our Created in Cavan members.

Traditional Pancake


  • 100g plain flour
  • 2 large eggs (From Margaret’s Eggs, Forest Hill Farm or Seannua Farm)
  • 300ml milk
  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying
  • lemon wedges Honey (From Muff Honey or Carrickfern Pure Irish Honey) and caster sugar to serve


  1. Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil, and a pinch of salt into a bowl or jug, then whisk until you have a smooth batter.
  2. Set aside for 30 minutes to rest if you have time, or start cooking straight away.
  3. Set a medium frying over medium heat.
  4. When the pan is hot, cook your pancakes for 1 minute on each side until golden.
  5. Serve with lemon wedges, honey, and caster sugar.

Boxty Potato Pancakes


  • Drummully Boxty
  • Olive Oil
  • To serve eggs (From Margaret’s Eggs, Forest Hill Farm or Seannua Farm), bacon, or Barry John’s sausages


  1. In a pan, add a little oil and fry Drummully Boxty on both sides.
  2. Fry off eggs, bacon, or sausages. Whichever you choose.
  3. Serve – Easy Peasy.

Chocolate Chip Pancakes


  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1/2 cup chocolate chips
  • Berries to serve


  1. Follow the basic pancake recipe, adding the chocolate chips to the batter just before cooking. Try the great cooking chocolate from Aine’s Handmade Chocolate.
  2. Heat a pan over medium heat. Once hot, ladle 1/4 cup of batter onto the pan for each pancake.
  3. Cook until bubbles form on the surface and the edges begin to dry, then flip and cook for an additional 1-2 minutes on the other side.
  4. Serve warm with chocolate and berries.
