It’s that time of the year again – Pancake Tuesday!
It’s time to dust off the spatula and get ready to cook up a storm. This great day in the calendar is all about enjoying delicious pancakes in all their fluffy, buttery goodness.
It’s time to gather with family and friends, experiment with recipes, and indulge in all your favourite toppings. Especially the ones Created in Cavan!
Basic Pancakes Recipe
Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg (From Margarets Eggs or Seannua Farm)
3 tablespoons butter, melted
Method:
1. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
2. In a separate bowl, beat the egg and then stir in the milk and melted butter.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix, as this can result in tough pancakes.
4. Heat a nonstick pan over medium heat. Once hot, ladle 1/4 cup of batter onto the pan for each pancake.
5. Cook until bubbles form on the surface and the edges begin to dry, then flip and cook for an additional 1-2 minutes on the other side.
6. Serve warm with your favourite toppings.
Blueberry Pancakes Recipe
Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1 cup fresh or frozen blueberries
Method:
1. Follow the basic pancake recipe, adding the blueberries to the batter just before cooking.
2. Serve warm with honey from Muff Honey or Carrickfern Honey. Or with some whipped cream from Lakeland Dairies.
Chocolate Chip Pancakes Recipe
Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1/2 cup chocolate chips
Method:
1. Follow the basic pancake recipe, adding the chocolate chips to the batter just before cooking. Try the great cooking chocolate from Aine Handmade Chocolate.
2. Heat a nonstick pan or griddle over medium heat. Once hot, ladle 1/4 cup of batter onto the pan for each pancake.
3. Cook until bubbles form on the surface and the edges begin to dry, then flip and cook for an additional 1-2 minutes on the other side.
4. Serve warm with a dusting of powdered sugar.
