Long ago in Ireland the butcher shop was one of the most important shops in every town and village. The place where you went to get the good meat for the Sunday roast and all of the news of the day. Butchers declined in towns and villages with the arrival of the bigger supermarket chains, but a revival of sorts is happening all over the country. Customers are more conscious now of where their meat comes from, and they are searching for a more personalised experience when it comes to sourcing great cuts of meat. Part of the butchery revival in Cavan is Herd Butchery and we are delighted to welcome them to the Created in Cavan food and drinks Network.

Herd Butchery is a new butcher shop situated in Butlersbridge. They specialise in whole animal butchery, house made charcuterie and local fine food products. The butchery opened just last year by Robert Mee- a native of County Cavan. Robert focuses on nose to tail butchery, a sustainable form of traditional butchery that leaves no part of the animal wasted.  Through their sausage making and charcuterie, they can utilise cuts of the animal that would usually be disposed of, reducing waste, and introducing new and interesting cuts to their customers. All their meat is sourced directly from local farmers and producers where possible.

Some of his homemade offerings include pork terrine with chorizo and figs and confit duck leg rillette. These tasty homemade delights are also available through the local green box Cavan. Just in time for BBQ season- their blue cheese and caramelized onion beef burger is definitely one you want on the grill!

Since opening Robert and his team have welcomed RTE 1 with their Ear to the Ground programme and the Irish Independent to profile his new business. This butchery is certainly putting Cavan food on the map!
