Situated outside of Maghera in County Cavan, Peter Monaghan started “Inis Escargot” back in 2015. Inis Escargot breeds, rears, and fattens Helix Aspersia Muller Snails. These snails are the most common ones consumed by humans.
While we don’t often see snails on an Irish menu, they are becoming more and more popular- especially for their health benefits (the nutrient content of snail meat is higher than a chicken egg per gram). Inis escargot is one of only 30 snail farms in Ireland, but popularity is growing. The snail growing season starts early January, with infant snails fed forage rape and a high-cost calcium powder mix. But Inis escargot are not just breeding the snails, they are also teaching other farmers how to start a similar business.
Peter provides on farm training for start-up snail farmers hoping to tap into the high potential for snail exporting throughout Europe. He has developed a snail farming method that works in Ireland. After years of fine tuning the process, he can now help other farmers start their own Snail Farms through this unique On-Farm Training Course. These courses are filling up months in advance such is the popularity and interest in snail farming.
A delicacy, taking the culinary world by storm now is snail caviar. Snail caviar, also known as escargot caviar or escargot pearls, is a type of caviar that consists of fresh or processed eggs of land snails. It is a luxury gourmet speciality, and we now see it being produced in Ireland.
