Valentines’ recipes Created in Cavan

This Valentines day falls on a Monday- not an ideal day for dinner out, so lots of us may choose to treat that special someone the weekend before or after. Richard Corrigan’s Soda Bread

Everyone loves home-made soda bread so make this the first thing you make for your loved one this Valentines. This could be used as part of the perfect Cavan breakfast or with your starter for Valentines dinner.


250g plain flour
10g salt
15g sodium bicarbonate
150g wholemeal flour
150g jumbo oat flakes
1 tbsp clear honey
1 tbsp black treacle
500ml buttermilk


Heat the oven to 200°C and line a baking sheet with baking grease.

Combine the dry ingredients in a bowl. Make a well in the centre, then mix in the honey, treacle and buttermilk, working everything together lightly with your hands until you have a loose, wet dough.

Flour your hands, shape the dough into a round and lift it onto the baking sheet. Cut a cross in the top. As the loaf cooks it will help to separate it into quarters.

Put it into the oven and bake for around 35-40 minutes or until the loaf sounds hollow when tapped on the base. Transfer to a wire rack, drape a damp cloth over the top and leave to cool.


Smoky Bacon Sausage Lasagne from Barry Johns Sausages

Sausage lasagne

A sausage lasagne may not be the first thing you think of when making a romantic meal- but it’s a tasty one! This is a delicious twist on an original lasagne dish, with their tasty Smoky BBQ sausages to add that extra flavour.


1 packet of Barry Johns Gourmet Smoky BBQ Pork Sausages

750g of mince beef

1 jar of white lasagne sauce (maybe a 2nd jar needed, if you like your lasagne nice & creamy)

1 jar of tomato pasta sauce

8 lasagne sheets

2 garlic cloves, chopped finely

Grated mozzarella cheese

Small amount of oil for frying



Preheat oven to 180°C.

Remove skins from smoky BBQ sausages and in a heated frying pan, add a little oil and fry up the sausages until golden, approx. 3-4 minutes. Set aside.

Cook the mince and add the finely chopped garlic and tomato pasta sauce. Stir.

In a large lasagne dish, begin to layer up the lasagne, 1) put mince into the bottom of the dish, 2) next put 4 sausages – spaced out, 3) sprinkle a small amount of white sauce, 4) put 4 lasagne sheets on top, 5) add some more white sauce on top and sprinkle with cheese. Repeat steps 1 to 5, finishing up with a full covering of white sauce and cheddar cheese.

Bake for 30-45 minutes until lightly browned and heated through.

Let stand for 10 mins before serving. Serve with crisp salad and/or garlic bread.


Morans Mega Jam Burger Recipe

This is the perfect meal for 2 that can be whipped up after you’re home from work on Valentines day.


450g ( 1lb ) minced beef

110g ( 4oz ) chopped onions

1/4 tsp salt & some pepper

1/2 tsp fresh thyme leaves

1 egg ( preferably free range)


Saute onions in butter until soft. Mix all the ingredients together well. Shape into cakes. Dip in seasoned flour and fry in oil turning as required until fully cooked. Top with tomatoes and grated cheese, then flash under the grill until the cheese begins to melt. Serve with Moran’s Country Relish.

Fishcakes from Virginia Cookery School

A lovely light dinner or a tempting starter- this fishcake recipe from Virginia Cookery school is an easy to make addition to your Valentines dinner.


300g mashed potatoes

300g of fresh fish of your choice

Half of one fresh chilli with the seeds removed.

One spring onion

15ml of fish sauce

1tsp of garlic granules

Zest and juice of half a lime

1 egg beaten

Crushed cornflakes

Spray oil


Combine half the fresh fresh, chilli, spring onion, fish sauce, garlic granules and lime in a food processer and zap into a rough paste. Add the remaining fish and process briefly. Add the mixture to the cooked mashed potatoes. Season with salt and pepper. Add a little beaten egg to help combine the ingredients. Squeeze the mixture tightly to make 6/7 balls. Coat each ball in the beaten egg and crushed cornflakes.

Flatten each ball on a heated frying pan and spray with some oil. Turnover regularly. Fry each side for 7-10 minutes. Serve with a side salad and a wedge of lemon!

Coole Swan Lava Cake

The most delectable, and romantic of all desserts! This yummy recipe from Coole swan is sure to win you lots of Brownie points!


142g 70% dark chocolate

135g Butter unsalted

142g Icing sugar

4 and a half eggs

Butter unsalted

Cocoa powder

Frozen Coole Swan White Chocolate

55g Coole Swan

30g Cream

95g Milk

Half an egg


Melt the butter and the chocolate.

Whip the eggs and the icing sugar together. Fold the chocolate into the egg mixture.

Sieve in the flour and fold into the mixture.

Let the mixture rest for one hour in the fridge.

Brush the cake moulds with soft butter and cover with cocoa powder.Fill a third of the mould with the mixture.

Place the frozen Coole Swan white chocolate in the middle (See below for recipe).

Fill the rest of the mould with the mixture. Cook at 170C for ten minutes just before serving.

Frozen Coole Swan White Chocolate

Warm the Coole Swan, cream and milk. In a separate container melt the white chocolate. Pour the Coole Swan mixture over the melted white chocolate and stir. Beat the egg and add to the mixture.Freeze in a silicone ice cube mould.


Mango Banana smoothie from Ice Cream treats

Another delicious treat for your other half this Valentines. Who doesn’t like a fruity ending to the meal and with this delicious Yomega frozen yogurt from Ice-cream treats, you are onto a winner!


1banana (medium, peeled)

2 scoops Mango Frozen Yogurt

150mls milk

1tablespoon honey


Place the honey and the yogurt in the blender.

Then top with the banana.

Blend until smooth.

Add ice if you need it to make it thicker or colder. Blend again.

Blend as many times as required to get achieve the consistency you fancy.
