Created in Cavan is a collaborative food, drink, and hospitality community. It brings together local businesses to work together to raise the visibility of their superb offering across the county, Ireland and internationally. 2022 is off to a great start with the addition of SeanNua Farm to the network.

SeanNua Farm is a small-scale regenerative farm located in East Cavan at the foot of Loughanleagh mountain between the towns of Bailieborough and Kingscourt. Their aim is to provide their local community with nutrient dense food whilst improving the environment and contributing to the creation of a robust farm ecosystem.

SeanNua Farm raise pastured poultry on chemical free land and feed only high-quality organic feeds. From their feathered friends they have the best pasture raised eggs on the market for sale. They have also introduced pastured raised geese. A fantastic alternative to Turkey during the festive season- or any time of the year.
They also have a market garden where they grow beautiful nutrient dense vegetables from organic seeds. The market garden is no dig, no spray; and everything is produced naturally without the use of any chemicals.

You will find all their produce available to buy at Clonmellon farmers market and Collinstown market. You can also buy their produce online on the Neighbourfood market in Belturbet.

Here is a great recipe for homemade custard:

Ingredients:

Makes 1 pint

570ml of milk

55ml cream

vanilla pod or 1/2 tsp vanilla essence

4 SeanNua Farm pasture raised egg yolks

30g caster sugar

2 level tsp cornflour

 

Method:

Bring the milk, cream and vanilla pod to a simmering heat.

Whisk together the egg yolks, caster sugar and cornflour until well blended.

Remove the vanilla pod.

Pour the hot milk and cream onto the eggs and sugar whisking all the time.

Return to the pan and allow to thicken over a low heat stirring with a wooden spatula.

Pour and serve

Tip! To keep warm, place the jug in a pan of hot water and cover with clingfilm, this will avoid any skin forming on the surface.
